I’m not that passionate about cooking and I also don’t like to cook anything complicated. But when I do cook, it is quick and easy and when it comes down to it, it would be good if the dish tasted good too. Sometimes eating healthy isn’t that bad for your health. As an alternative to pizza or pasta, we cook eggplants together. It’s vegan, easy and delicious.
To make eggplant you need these simple ingredients:
- Of course, eggplants 4-5 pieces,
- 1 bunch of Parsley,
- less than a bunch Coriander (only if you like),
- a large onion or a few small ones,
- Garlic (1-2 cloves),
- ground walnuts.
After that, mix parsley, coriander, salt, pepper and garlic with ground walnuts and you should fry the onions separately and add them to the mixture.
Smear the fried eggplants with this mixture and roll the eggplants. This is one option and so you can eat it with bread or something else.
Or shred the fried eggplants and add them to the mixture and it looks like a thick cream that you can smear on the bun or bread and eat it like that.
Cooking eggplants this way takes 20 to 30 minutes.
